Executed in 2004, in Beverly Hills, MI, this is one of the better examples of the kitchensystem in its fully realized form The flow runs from the garage through a small “mud room”, with a counter on which to set the day’s acquisitions and with recycling and freezer under it (Supply). It then moves to the fridge and pantry (Storage); to Wet Prep and then immediately to Hot Prep (with a plating area incorporated). Next, out to Service, either in the dining room beyond, or across the “island” (reaching over the Scullery) to the eating bar. From either Service location, to Scullery and then back to Storage. This layout lacks the perfect “T” configuration, but is an excellent alternative to it.
